Serving suggestions

Vinification
30 different plot-by-plot vinifications followed by fermentation in stainless steel vats and amphorae. The grapes are carefully sorted and pressed whole in a vertical press or undergo limited cold maceration. Fermentation takes place in stainless steel vats and amphorae, separately for each plot of vines. Aged on fine lees for 3-4 months.
