Assyrtiko
Assyrtiko is undoubtedly Greece's most iconic white grape variety and produces some of the finest wines in the Mediterranean.
The vines produce medium to large berries with a golden yellow hue. As it ages, Assyrtiko develops rich, concentrated flavors with moderate fruit that is never overly sweet, while its characteristic high acidity gives the wines a lively and elegant profile.
Although native to the island of Santorini, Assyrtiko is increasingly being grown on many islands in the Aegean Sea, mainland Greece, and beyond. It adapts perfectly to a variety of soils and climates. However, it is only in the maritime and volcanic terroir of Santorini that it shows its distinctive dusty, basaltic, and salty minerality that has given it its broad modern appeal to sommeliers, wine lovers, and chefs around the world.
