Vinsanto (Vino di Santorini) has been renowned since the 12th century and is considered one of the best dessert wines in the world. Made from white grapes harvested late and dried in the sun, this traditional, naturally sweet wine is aged in oak barrels for at least two years, but usually much longer. Vinsanto has a protected designation of origin (PDO) and must be made from at least 51% Assyrtiko grapes.

Tasting Notes
Amber brown in color with orange highlights. The nose offers complex and exuberant aromas of dried fruit, butter, vanilla, honey, caramel, coffee, nuts, and spices. On the palate, the sweetness is balanced by naturally high acidity. This is a full-bodied, succulent wine with a persistent, endless finish. A pleasant tannic finish contributes to the overall balance of this wine.

Vinification
Made from 75% Assyrtiko blended with small amounts of Aidani and Athiri. After harvesting, the grapes are dried in the sun for about 11 days. The dried grapes are then gently and slowly pressed in a vertical press basket, then fermented on their own yeasts in open stainless steel tanks. The wine is aged for 4.5 years in 225-liter French oak barrels.
