Nassitis means islander in the local dialect spoken by the Dorians who inhabited the island of Santorini after the volcanic eruption, nearly 3,000 years ago.

Pale lemon color in the glass. A nose of moderate intensity, where honeysuckle and tropical fruits compete with an appealing juicy acidity and texture. Kumquat and pineapple meet apricot and peach in an excellent combination. Rich in acidity, with a strong, savory presence that borders on saline. Long-lasting tropical aftertaste, with freshly squeezed lemon and mineral notes.

Serving suggestions

Vinification
Typical white winemaking techniques, with 70% whole cluster pressing and 30% destemmed grapes, vinified in stainless steel tanks under controlled temperature. Each grape variety is vinified separately. Blending takes place after fermentation is complete. It remained on its lees for 6 months.
