An elegant wine with balance and complexity between the minerality of Assyrtiko and the structure and layers of oak. Despite criticism of the use of oak in Assyrtiko, Alcyone shows that when used correctly, it adds complexity and richness, resulting in a perfectly balanced wine with long aging potential.

Serving suggestions

Vinification
A 100% Assyrtiko wine made from grapes harvested by hand in three vineyard plots. Pressed as whole clusters and fermented in oak vats and 500-liter barrels. After four months of stirring, the wine matures on its lees. After bottling, Alcyone rests in our cellars for an additional seven months before being released for sale.

Food pairing
Grilled fish, lobster with beurre blanc sauce, white meats (chicken and pork) cooked in a white sauce, and hard cheeses.
