Domaine Oinea is a pioneering biodynamic winery in the emerging region of Amyndeo, renowned for its exceptional sparkling wines. The estate’s vineyards are located at an altitude of between 570 and 750 meters above sea level, benefiting from the cooling influence of nearby lakes and northern winds. The calcareous, sandy soils are naturally poor, which brings out the unique characteristics of the indigenous Xinomavro grape variety, which forms the basis of most of their wines. Adhering to biodynamic principles, the estate uses natural yeasts selected from Domaine de Fleury in Champagne, France, for fermentation. The result is wines characterized by high acidity, low pH, and depth of body and aromas. With an annual production of around 20,000 bottles, Domaine Oinea illustrates the potential of Greek biodynamic winemaking.
