Aromas of sour cherries and raspberries with a spicy note. Tomato leaves, capers, and olives. Pleasantly rich on the palate, with finely integrated tannins and a hint of earthiness. Excellent balance with a mineral core.

Serving suggestions

Vinification
Whole bunches are pressed in a basket press. Spontaneous fermentation takes place at 18-22 degrees Celsius in open baskets. The Xinomavro is aged in stainless steel vats for 5 months, while the Limniona is aged in used barrels. The blend is made in a 500-liter barrel where it is stabilized before being bottled. Low sulfur content, no chemical additives.
