Vinification
The grapes are harvested when overripe to produce the high alcohol content that defines this wine. Fermentation takes place in 30-year-old barrels previously used for Vinsanto. It is then left to age for 9 months without topping up, allowing contact with oxygen. The wine is then transferred to steel tanks and bottled after 3 months. It is aged in the bottle for two years before release.

Pair with complex dishes such as slow-cooked meats, creamy sauces, aged cheeses, beef fillet carpaccio with leek cream and pesto sauce, or fresh tuna tataki with sesame and seasonal greens.
