Plethora is a unique, high-end wine inspired by traditional winemaking techniques. Made from the finest Assyrtiko grapes, harvested late for optimal ripeness, this wine undergoes a meticulous winemaking process. Fermentation in stainless steel tanks is followed by extended aging in wooden barrels without topping up, allowing for gentle oxidation. This unique approach results in a wine of exceptional complexity, characterized by a captivating interplay of ripe fruit, a smooth texture, and vibrant acidity, reflecting the unique influence of the volcanic terroir. Vinification

The grapes are harvested when overripe to produce the high alcohol content that defines this wine. Fermentation takes place in 30-year-old barrels previously used for Vinsanto. It is then left to age for 9 months without topping up, allowing contact with oxygen. The wine is then transferred to steel tanks and bottled after 3 months. It is aged in the bottle for two years before release.

Food pairing

Pair with complex dishes such as slow-cooked meats, creamy sauces, aged cheeses, beef fillet carpaccio with leek cream and pesto sauce, or fresh tuna tataki with sesame and seasonal greens.
