The grapes are harvested by hand before dawn and the whole bunches are immediately pressed to preserve the freshness of the fruit. After a long period of fermentation and maturation, the result is a wine of astonishing elegance that displays all the unique characteristics of the chic white grape variety Assyrtiko.
