Vinification
Vinification begins with a manual harvest at the end of August, where the grapes are meticulously transported by donkey from steep terraces with a 35-50 degree incline. Alcoholic fermentation takes place in temperature-controlled stainless steel vats using neutral natural yeasts, resulting in an alcohol content of 12.3%. The wine is then aged for 3 months in 500-liter French oak barrels, followed by 6 months in stainless steel vats with stirring of the fine lees.

Food pairing
