Anomon is a unique interpretation of the rare Greek grape variety Mavrodaphne, a far cry from the sweet style with which it is traditionally associated. True to its philosophy of minimal intervention winemaking, Oenops highlights the purest expression of the terroir and the grape variety. Fermented with native yeasts in amphorae and large open barrels, then aged for several years, this wine offers remarkable elegance, great finesse, and excellent aging potential. Its name,
Anomon (“outside the rules”) refers to a peculiarity of Greek legislation: since the Mavrodaphne grape variety cannot be listed on dry wines, the winery chose a name that humorously asserts this freedom to break with convention.

Serving suggestions

Vinification
The grapes come from selected vineyards in Macedonia and are harvested at peak ripeness. After rigorous selection, fermentation takes place slowly with native yeasts in clay amphorae and large open barrels. The wine is then aged for ten months in these same containers, before continuing to mature for four years in the bottle. It is bottled unfiltered to preserve its purity and character.

Herb-crusted pork tenderloin, beef tataki, lamb chops, wild boar, herb-seasoned poultry, mushroom risotto, grilled vegetables, and hard cheeses such as Graviera.
