Lime green color. Complex nose of white flowers, stone fruit, lime, herbs, and a hint of minerality. Rich on the palate with citrus and lemon thyme. Appealing texture with soft notes of salinity. Rich, long finish.

Vinification
The grapes come from contracted growers, mainly from the mountainous areas of Heraklion, Crete. After being cooled to 5°C, the grapes are carefully sorted and pressed whole in a vertical press. Spontaneous fermentation takes place slowly in four different types of vats: clay amphorae, concrete vats, large barrels, and stainless steel vats. After six months of aging in amphorae and concrete vats, with only a small percentage in large old barrels, the wine is bottled without filtration to preserve its purity and elegance.
