Vinification
The Assyrtiko grapes come from carefully selected vineyards in Macedonia. After the grapes are chilled to 5°C, they are gently pressed using a pneumatic press. Alcoholic fermentation takes place in both stainless steel tanks and oak barrels to combine freshness, structure, and complexity. The wine is then aged on its lees for six to eight months; the oak adds body, while the tanks preserve the purity of the fruit and the variety’s signature minerality.

Pairs perfectly with fish, seafood, white meats, Mediterranean cuisine, grilled vegetables, and aged cheeses.
