Vinification
The grapes come from contracted producers in Naoussa, Amyndeo, and Rapsani, from vineyards aged between 45 and 80 years old. Vinification is carried out without intervention, following ancient traditional techniques combined with modern expertise. Fermentation takes place in clay amphorae and concrete vats, while slow fermentation is accompanied by controlled extraction. Aged for 6 months in amphorae and large old barrels. Bottled unfiltered. No added sulfites.

Food pairing
Poultry, guinea fowl with cranberries, plain rib steak, pan-fried foie gras, pâté, spaghetti alla guanciale, very easy to pair with cheese
