Production
The grape pomace undergoes slow, controlled fermentation to preserve its aromatic profile. Distillation takes around 12 hours and includes a careful separation of the heart of the distillate to ensure balance and finesse. The spirit then rests for at least six months before bottling, allowing its aromas to integrate.

Pairs well with savory mezze, cured meats, aged cheeses, smoked fish, anchovies, marinated olives, and bold Mediterranean cuisine.
