Aged Tsipouro 19.05 is a small-scale, artisan Cycladic marc brandy, craft-distilled on the island of Syros and aged for five years in French oak barrels previously used for Bordeaux and Vinsanto wine maturation. Each barrel is lightly toasted before the distillate is introduced, enhancing the interaction between spirit and wood during the aging process.
The number “19.05” indicates the year of distillation and the duration of aging, highlighting the unique identity of each batch. Every year, a limited quantity of distillates with different aging levels is bottled, allowing enthusiasts to explore how time transforms the aromas and structure of tsipouro.

Production
Following slow fermentation and precise distillation with careful heart selection, the spirit is matured in French oak barrels previously used for Bordeaux and Vinsanto wines. The lightly charred barrels contribute depth and aromatic complexity. Ageing takes place in the island’s maritime microclimate, shaping texture and structure over time.
