Aged Tsipouro 20.03 is a small-scale, artisan Cycladic marc brandy, craft-distilled on the island of Syros and aged in French oak barrels, previously used for Bordeaux wine maturation. Each barrel is lightly toasted to reveal the full character of the distillate, and the aging process captures the intense seasonal variations of the island’s climate.
The number “20.03” indicates the year of distillation and the duration of aging, underlining the unique character of each batch. Every year, a limited quantity of different aged distillates is bottled, offering the chance to explore how time shapes the aroma and structure of tsipouro.

Production
Following slow fermentation and careful distillation with precise heart selection, the spirit is aged in French oak barrels previously used for Bordeaux wines. The barrels are lightly charred inside, enhancing aromatic complexity and structure. Ageing takes place in the island’s maritime microclimate, where temperature variation and sea air contribute to its development.

Food pairing
Ideal with dried fruit, nuts, dark chocolate, mature cheeses or as an after-dinner drink. Can also be enjoyed with a cigar.
