Tasting Notes

Serving suggestions

Vinification
The grapes are harvested by hand and transported directly to the winery, where they are first cooled and then destemmed. They are then transferred to stainless steel tanks, where cold maceration takes place at a temperature of 44-46°F for 12-18 hours. Through gentle pressing, we separate the juice from the skins and fermentation, which lasts 18-22 days, takes place at a temperature of 16-17°C.
