Serving suggestions

Vinification
Selected vineyards, aged between 15 and 40 years. The grapes are harvested by hand and transported in refrigerated chambers. They are then rigorously sorted before being sent to the press. The juice remains with the skins of the red variety at a temperature of 7-9°C for 5-6 hours, then light pressure is applied and the fermentation process takes place at a temperature of 14-16°C. After alcoholic fermentation is complete and before bottling, the wine remains in contact with the fine lees for 3 months, being stirred at regular intervals to acquire complexity and a silky texture.
