Serving temperature

Vinification
The optimal harvest time for each variety is determined by phenolic and technical ripeness. After manual harvesting, the grapes are selected on the sorting table, then individually cold soaked at 46-46°F for a period of 3 to 5 days, depending on the grape variety. The vinification process takes place in stainless steel vats at a temperature between 20 and 23°C. After fermentation is complete, the wine remains on the fine lees for 60 to 80 days to obtain more volume.

Food pairing
A balanced and fruity red wine, ideal for hamburgers, barbecues, pasta with red sauce, and a wide variety of cheeses. It can also be enjoyed on its own.
