Imagine walking through a canvas of vibrant crimson, where each brushstroke reveals an explosion of ripe cherries and raspberries in your mouth. The vibrant fruits dance against a primitive and wild backdrop, illustrating the new dynamism of Mandilaria.

The terrain of Paros is geologically ancient, and selecting the best vineyards for the DNA of indigenous varieties represents a major challenge for the P | F | C team. Variations in altitude and slopes, a wide range of parent rocks, and variations in sun exposure from one location to another create an exceptionally diverse puzzle. For this specific cuvée, vineyards located at an altitude of 350-450 m were chosen, with soils derived from schist and igneous rocks. The dominant presence of granite, basalt, and gabbro has led, over the centuries, to sandy soils with low pH and poor in organic matter and nutrients. This profile has succeeded in disciplining the vigor of Monemvassia and Mandilaria. The reason for bottling the TOPOS cuvée therefore lies in its concentration, its tight structure on the palate, and its persistent, mineral, and subtly phenolic aftertaste.

Tasting Notes

Vibrant red color with purple hues. Cherries and raspberries unfold against an animalistic backdrop. The structure and balance of the flavor highlight a new dynamic in Mandilaria. Co-vinification with the Monemvassia grape variety leads to ethereal and fruity notes, making this wine an elegant and gastronomic choice. The acidity, combined with the phenolic volume, adds a lasting aftertaste, full of pepper and herbs.

Vinification

Pre-fermentation maceration for 4 days in an antioxidant environment. Alcoholic fermentation takes place at 24-26°C and lasts 25 days. A 5-day post-fermentation phase at 30°C precedes the final recovery of the wine. After completion of malolactic fermentation, the wine is aged for 12 months in a combination of stainless steel and oak containers.
