From the sunlit terraces of Paros, where ancient ungrafted bush vines meet limestone soils swept by the Aegean breeze, Premno reveals the purest expression of Mandilaria. Handcrafted from 85-year-old organic vines grown at 420–550 meters, this wine stands as the bold signature of the Paros Farming Community — a symbol of revival and collective excellence. Matured for over two years in a mix of oak, amphora, concrete, and stainless steel, Premno captures both the island’s rugged character and its new era of refined craftsmanship.

Tasting Notes
Deep, inky ruby color with purple reflections. Intense aromas of wild sour cherry, black plum, and Mediterranean herbs. On the palate, it’s bold and full-bodied, yet remarkably balanced—firm Mandilaria tannins wrapped in layers of juicy fruit and savory spice. Long, fresh, and gastronomic, this is a true vin de garde that will unfold beautifully over time.

Vinification
The grapes used for the Seiradi Premno Rouge cuvée are vinified separately (no co-vinification). After harvesting, they undergo a pre-fermentation maceration period of 4 to 5 days, promoting the extraction of color and aromatic precursors. Alcoholic fermentation is triggered using inoculated yeasts and lasts around 25 days at a high temperature, ensuring that the aromas and structure develop fully. This is followed by post-fermentation maceration for 4 to 5 days, bringing the total maceration time to around 35 days. The wine is then aged for 24 to 26 months in a combination of oak barrels, clay amphorae, concrete eggs, and stainless steel tanks, giving it a complex balance of texture, depth, and freshness.

Food pairing
Pink veal liver, delicately seared generous cuts, slow-braised beef cheeks.
