Tasting Notes
Deep crimson colour. The nose shows dark berries, spice, earth and dried herbs. On the palate, it is structured and layered with ripe tannins, vibrant acidity and a long, savoury finish. A serious, contemplative red with ageing potential.

Vinification
About 7 days of skin contact. Spontaneous fermentation in stainless steel lasting around 35 days, with no additives and no added sulfites.
After fermentation, the wine was divided into three roughly equal parts and aged separately for about 2 years: one part in stainless steel, one in very old French oak barriques (225L), and one in new untoasted French oak (500L). The final blend was then made and bottled unfined and unfiltered. The wine rested in bottle for an additional year before release.

Food pairing
Roasted lamb with prune sauce, Beef Bourguignon, Chicken tagine with spices and dried fruits, Mushroom and parmesan risotto, Chorizo with roasted red peppers, Aged cheese like cheddar or Comté, Roasted beets and carrots with balsamic.
