Tasting Notes
Imagine a canvas of deep ruby brushed with purple. The first whiff of Climax reveals the warmth of Mavrodaphne raisins and plums, followed by the vibrant brightness of ripe red fruits and Mavrotragano spices. The final whisper is the refreshing flavor of Agiorgitiko’s tart cherry. On the palate, the richness unfolds with a long, satisfying finish and a caress of well-integrated tannins, all harmonizing with the soft touch of the barrel.

Vinification
The three grape varieties are harvested at different times and vinified separately in small fermentation tanks. The percentage of grapes to be vinified without destemming is determined for each variety, followed by cold maceration for several days before alcoholic fermentation begins at a temperature of 22°C to 25°C, depending on the grape variety and stage of vinification. Post-fermentation maceration lasts 7 to 10 days, after which only the free-run juice and soft pressings are collected. After the necessary tastings, the blend is decided. The wine is then placed in new French oak barrels, where it ages for 11 months. After bottling, the wine rests in the bottle for 7 to 8 months before being released for sale.

Food pairing
Grilled red meats or served with rich sauces, game — notably venison stew (civet de biche) — and matured, spicy yellow cheeses.
