Vinification
Severe pruning, late harvesting, and particularly careful sorting of healthy grapes. Additional sugar concentration is achieved through brief, indirect exposure of the grapes to the sun. Vinification using natural flow of the must and gentle pressing. No clarifiers or filters are used during vinification and bottling in order to better preserve the authentic character of the grapes.
