Tasting Notes
Lola is an appealing blend of Mandilaria with a small amount of Cabernet Sauvignon and Savatiano to soften the fierce tannins. High-quality resin is added at the start of fermentation, giving it its complex, herbaceous character. Produced every two years, this wine has an impressive structure and is slightly reminiscent of a red wine, but it is anything but! Notes of candied red fruit, maraschino, spices, lemon peel, and a hint of pine make it suitable for even the most curious palates.

Vinification
Grapes harvested by hand at night and transported to the estate in small crates. Classic vinification of white wines in temperature-controlled stainless steel vats. The addition of a small amount of pine resin to the must during fermentation gives the wine its unique taste. The power of fermentation dissolves the resin and gives the wine its characteristic flavor. Bâtonnage for 6 months.

Food pairing
Ramen, Indonesian cuisine, octopus spaghetti, honey-glazed chicken
