Tasting Notes
Bright golden color. Aromas of bergamot, lemon zest, jasmine, followed by notes of walnut and honeycomb, with hints of crushed seashells. On the palate, it has a delicious, slightly oily texture, crisp acidity supported by a medium finish.

Serving suggestions

Vinification
Nighttime harvesting by hand during the second week of September. After nighttime harvesting and before sunrise, the grapes are transported to our cellar in small crates, preserving their freshness and the cool nighttime temperatures. They are then separated from the stems and concentrated in stainless steel vats for contact with the skins. They remain there, with the aid of refrigeration, for about 10 days to begin alcoholic fermentation by the indigenous wild yeasts found on the fruit and in the vineyard. During this period, every 24 hours, 10% of the fermented grape must is collected from the bottom of the tank during its transfer to the fermentation tank in order to separate it from the grapes, while 10% of the freshly harvested grapes refill the tank from the top. After fermentation is complete, the fresh wine remains for 10 months with the fine lees, using the “batonnage” method.
