
From a small organic vineyard in northern Greece, Des. is a naturally sweet Chardonnay — with no additions — crafted through gentle dehydration of the grapes while still on the vine. Harvested in late August to preserve both sugar and acidity, it spends two years aging in barrels, developing remarkable depth and complexity. The result is a rare sweet wine of balance, texture, and quiet power.

Serving suggestions

Vinification
The stems are crushed at the begging of the harvest, the grapes are then left to nearly dry on the vine and picked when overripe. Fermentation taking place in stainless steel tank with the skins. Aging in oak barrel for 24 months.

Food pairing
Enjoy on its own or paired with blue cheeses, fruit desserts, apricot macarons, or spiced orangettes. Also excellent with foie gras or pâtés.
