Tasting Notes
Dark, amber color. Exuberant complexity on the nose with sweet notes of burnt orange peel, prune, quince paste, raisin, sweet tobacco, coffee, and caramel. Balance is its greatest virtue. Its restrained acidity, moderate alcohol content, and full body create a charming, harmonious, and persistent whole. Full of flavors of toasted nuts, apricot, honey, and aged brandy, this wine offers a truly classy tasting experience.

Vinification
Pruned vines, aged 30 to 35 years old and unirrigated, from three different vineyards in northwestern Samos produce aromatic micro-rosé grapes at yields of 85hl/ha. The late-harvest grapes are sun-dried in the vineyard under olive trees. Short extraction and gentle pressing of the grapes create a healthy, concentrated must that ferments spontaneously in new and old 225-liter oak barrels. Aged for 19 months in French oak barrels. The best barrels from different vintages are blended. Bottled unfiltered. The presence of sediment indicates aging and a lack of filtration, preserving its authentic character.

Food pairing
