Tasting Notes
Pale lemon color. The nose is complex with medium intensity, displaying well-defined floral aromas, melon, apple, nectarine, soft woody notes, infused with aromatic plants, reminiscent of Mediterranean herbs. The creamy flavors are balanced by a soft minerality and well-aligned acidity, while notes of vanilla and hazelnut add to a long and elegant finish. It is highly recommended to decant this wine before serving.

Vinification
Short extraction and gentle pressing of the grapes create a healthy must that ferments spontaneously in oak barrels. Stirring the lees in 500-liter barrels for 6 months adds volume and richness. Cold stabilization, filtering, and bottling are completed in the spring of the following year.

Food pairing
Sweet and sour chicken fillets cooked in a wok, Sichuan pork meatballs, mushroom risotto with rosemary, roasted eggplant with thyme, shrimp with cashews, venison fillet with a strong meat sauce.
