Viticulture: Organic, biodynamic
Vinification: Strict pruning, late harvesting and particularly careful sorting of healthy grapes. Further concentration of the sugars is achieved by brief and indirect exposure of the grapes to the sun. Natural flow vinification of the must and gentle pressures. No clarifiers nor filters are used during the vinification and bottling process in order to better preserve the authentic grape's character.
