Viticulture: Eco-oriented

Vinification: 30 different parcel-based vinifications followed by fermentation in stainless steel tanks and amphorae. Grapes are sorted carefully and pressed with whole clusters in a vertical press or limited cold maceration. Fermentation takes place in INOX tanks and amphoras, independently for each vineyard plot. 3-4 months of aging on the fine lees.
