Viticulture: Eco-oriented
Vinification: Grapes are sourced from contract growers mostly from mountainous sites of Heraklion, Crete. After their chiling at 5ºC, grapes are carefully sorted and pressed with whole clusters in a vertical press. Spontaneous fermentation takes place slowly in 4 different types of vessels : clay amphorae, concret tanks, large barrels and inox tanks. After 6 months of aging in amphorae and concrete tanks, with only a small percentage in big old barrels, the wine is bottled unfiltered to retain its purity and elegance.
