Andromachi’s Tasting Notes
Crispy fruit (cherries, wild berries) that blends perfectly with floral, earthy, herbal and sweet spice notes. Thick in texture with a mineral character, cherries dominate the palate. Acidity adds sharpness and tannins are velvety. Decanting this wine is highly recommended.
Wine Details
Viticulture: Eco-oriented
Vinification: Spontaneous fermentation in amphorae and 500l oak barrels. Aged for 10 months on its fine lees in concrete tanks, amphorae and old use big barrels. Bottled unfiltered.
Service temperature: 15-20°C
Pairings: vol-au-vent, duck breast, lobster spaghetti, grilled rib-eye with spices
