Plethora is a unicorn, high-end wine inspired by ancestral winemaking techniques.

The best Assyrtiko grapes of the year are harvested overripe, around two weeks after the main picking. The wine ferments in stainless steel tanks. Its overripe character results in a high alcohol level, leaving some degree of residual sugar. The wine then matures in old local barrels that are not topped up allowing for a gentle oxidation to take place. After twelve months in the barrels, the wine is bottled and cellared for two years before its release.

Andromachi’s Tasting Notes

The nose shows wonderfully creamy, dusty, biscuity aromas of lees, lemon peel, honey suckle, dried herbs, Japanese green tea and tell tale salty sherry flor nuances. Subtle notes of dried mint leaf, bruised yellow orchard fruits, wet grey slate and wet basalt round out a thoroughly complex and intriguing bouquet. Full and broad, the wine has an incredibly concentrated texture of salted lemons, tequila agave spice, bitter oranges, oyster shell, white peaches, grated pears, pineapple pastille, botanical herbs and an awesome, towering acidity.

Viticulture: Eco-oriented

Vinification: The grapes are collected overripe to give the high alcohol that defines this wine. Fermentation takes place in 30 year old barrels previously used for Vinsanto. It is then left to age for 9 months without being topped up allowing contact with oxygen. The wine is then moved to steel tanks and bottled after 3 months. It has aged in the bottle for two years prior to its release.
