A must-try “blanc de noirs” with small, fine bubbles and bright acidity. Elegant on the nose. The aromas of grapefruit, stone fruit and herbs gently transition into a biscuit aftertaste with a pronounced minerality.

Andromachi’s Tasting Notes

At first glance, this atypical "blanc de noirs" blend of Xinomavro (90%) with Assyrtiko (10%), seduces with its fine bubbles and its bright yellow colour. Fresh and thirst-quenching, its tangy, fruity taste evokes a scent of citrus, resins, Mediterranean bush and stones. Creamy mousse on the palate with small persistent bubbles in perfect contrast to its refreshing acidity.

Viticulture: Organic, biodynamic

Vinification: All free run juice. Whole bunches pressed in basket press. Temperature controlled spontaneous fermentation at 18 -22ºC. Low sulphur use, no chemical additives. Wine stays for four months in inox tanks. 2nd fermentation in bottle using natural yeasts from Champagne Fleury. Sur latte for 18months. Released 1 month after disgorgement.
