Vinification: Whole bunches pressed in basket press. Spontaneousfermentation at 18-22 celcius d-egrees in open basket. The Xinomavro is aged in inox tank for 5 months while the Limniona is fined in used barrels. Blended in 500lt tonneau where it is stabilized before bottling. Low sulphur use, no chemical additives.
