Optimum Mantineia 2023

NOVUS WINERYMANTINIA

Experience the Full Spectrum of Moschofilero! Born from a unique 1972 vineyard in the heart of P.D.O. Mantinia, Optimum reveals the remarkable depth and aging potential of this expressive variety. Organically cultivated and spontaneously fermented with indigenous yeasts, its extended contact with fine lees creates a wine of exceptional viscosity and enduring character.

Andromachi’s Tasting Notes

Evolved aromas unfold with grace, where the signature rose and bergamot notes of Moschofilero deepen with time. Subtle gray hues and golden reflections hint at its acacia barrel aging. On the palate, a buttery richness complements the purity and complexity imparted by concrete and acacia, leading to a remarkably long and satisfying finish.

Vinification: 1.14 hectare non-irrigated vineyard with a yield of 6000-8000kg/hectare, was planted in 1972 and is cultivated with organic practices. After 8-10 hours of cold maceration at 7-8°C, only the free-running juice is collected and alcoholic fermentation begins spontaneously with indigenous yeasts in stainless steel tank. Then and while the fermentation is about halfway through, a part of the juice is separated and tranferred to finish the process in small concrete eggs and another part in acacia barrels. For as long as it takes for the wine to mature, we make sure it is in constant contact with its fine lees, which will enrich the viscosity and texture, while at the same time supporting it for its long journey through time.
