Andromachi’s Tasting Notes

Bright and deep ruby colour with violet highlights. The nose has depth and complexity, complemented by aromas of sour cherries and blueberries, along with spices originating from the oak. On the palate it’s smooth with silky tannins and notable viscosity. The mouth floods with aromas of red fruits with a touch of vanilla, highlighted even more by the balanced acidity.

Vinification: Harvest by hand, followed by strict selection on the sorting table and afterwards, the destemmed grapes are cold soaked at 8-10°C for a period of 5 days. The wine is fermented in small stainless steel vats at 22-25°C and the malolactic fermentation is carried out in new French barriques, along with the maturation which lasts 10 months. After bottling, the wine rests in the bottle for 6-8 months before being released.

Service temperature: 15-16°C

Pairings: Serve with charcoal grilled meats, rooster cooked in wine with pasta, or hard yellow and creamy cheeses.
