Viticulture: Sustainable

Vinification: Selected vineyards, 15-40 years old. The harvest is manual and the grapes are transported in refrigerated chambers, while following they are strictly sorted before being sent to the press. The juice stays with the skins of the reddish variety at 7-9°C for 5-6 hours and then, light pressure is applied and fermentation process takes place at 14-16°C. After the end of the alcoholic fermentation and before bottling, the wine remains for 3 months in contact with the fine lees, while at the same time stirring is carried out at regular intervals, to acquire complexity and a silky texture.

Pairings: It wonderfully accompanies green salads, shellfish and grilled fish, and is also enjoyed as an aperitif.
