Andromachi’s Tasting Notes

Lola is a seductive blend of Mandilaria with a small equal amount of Cabernet Sauvignon and Savatiano just to soften the fierce tannins. High quality resin is added at the beginning of fermentation, giving it its complex and herbaceous character. This wine, made every other year, has an impressive structure and is slightly reminiscent of a red wine, but it is not! Notes of candied red fruit, maraschino, spices, lemon peel and a remarkable touch of pine make it suitable for the most curious palates.

Viticulture: Organic in conversion

Vinification: Night harvest by hand picking of the grapes, carried to the winery in small lattices. Classic white wine vinification in stainless steel tanks under controlled temperature. The addition of a small quantity of pine-resin to the must during fermentation, offers a unique taste. The power of the fermentation dissolves the resin and gives this characteristic flavour to the wine. Batonnage for 6 months.
