Andromachi’s Tasting Notes

Pale straw yellow with green tinges. The nose is delicate, mineral, evocative of ironstone and the Aegean, with notes of wild island herbs and hints of white fruits, plus a whisper of oak. Freshly bottled, expect evolving yeasty, melon, and banana notes as its true character unfolds. The palate offers high acidity, a medium body, and a refreshing, wet stone, salty finish, reflecting its island origins.

Viticulture: sustainable

Vinification: The winemaking begins with a manual harvest in late August, where grapes are meticulously transported by donkeys from steep, 35-50 degree terraces. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks using neutral natural yeasts, resulting in 12.3% alcohol. The wine is then aged for 3 months in used 500-liter French oak barrels, followed by 6 months in stainless steel vats with bâtonnage of the fine lees.
