Andromachi’s Tasting Notes

Complex aromas of bruised yellow orchard fruits, bees wax, ripe pears, chamomile tea, sea breeze salinity and pronounced mineral nuances of crushed basalt and gravel. The palate is broad with soft, creamy, spicy yellow fruits, green herbal tea nuances, spicy almonds and maritime complexity. Exceptional depth, harmonious balance.

Viticulture: Eco-oriented

Vinification: After a night harvest, the grapes travel from Santorini to Syros, only four hours after being picked, where both vinification and bottling take place in the facilities of a fellow winemaker. Whole clusters are pressed using a pneumatic press. The juice is kept for a day in a tank, at low temperatures, allowing it to clarify a little. Next day it's racked. The juice is pumped gently into a small inox tank and the fermentation takes place there with a selected yeast. The wine ferments at 22ºC. Ageing on the lees for a year before bottling. 16 months in the bottle, before being released.
