Siatista

Siatista is a small country town and the traditional heart of viticulture in the western Macedonian prefecture, Kozani. Unlike most of Greece, it is a mountainous place of stark beauty and cool climate far from maritime influences by virtue of its high, inland isolation.

The sterile grounds drew the inhabitants to cultivate vineyards and build fur farms, a declining trade nowadays.

Thanks to a very popular traditional red sweet wine, the “liastos”, local producers enjoyed a brief spell of export success to France in the late 19th century. This wine was produced from grapes left to dry in the shade, between 30-70 days, before being aged in a similar way to a solera system.

Today, there are more than 110 hectares of vineyards covered mostly by Xinomavro plantations.
