Bright lemon in colour. Gradually unfolding aromas of lemon blossom, thyme, citrus, grapefruit, peach, crushed stones and green tea. The palate has an incredible concentration and sharp acidity that is in perfect balance with its grassy quality. Spicy herbal aftertaste that persists.

Vinification: Careful grape sorting. Winemaking is done with gentle methods, as naturally as possible, leaving the “terroir” and the variety to express their own personality. No clarifiers and filters are used in order to better preserve the authenticity of this rare grape variety.

Pairings: Seafood, mussels with pepper, asparagus, frogs' legs, snails à la bourguignonne, gremolata dish.
